Old Fashioned "Soft" Pumpkin Cookies

If you like pumpkin and a soft cookie - you will LOVE these.  I still can't believe how soft they are.  My family loves them and my husband said he likes them better than my pumpkin cupcakes
 
 
Cookie Recipe
2 1/2 cups all purpose flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
1 1/2 cups sugar
1 stick butter - softened
1 cup Pure Pumpkin
1 large egg
1 tsp. vanilla extract
 
**  Combine all dry ingredients together in a large bowl. 
**  In a smaller bowl - combine eggs, pumpkin , butter and vanilla.
**  Combine the 2 mixtures and beat until smooth.
**  Drop by rounded teaspoon full onto greased baking sheet.  (I used parchment paper lined baking sheets)
**  Bake:  at 350 degrees for 15 minutes or until edges are firm.
**  Cool for 2 minutes then move to wire racks to cool completely.
**  Drizzle glaze over cookies.
 
Glaze Recipe
3 Tblsp. milk
1 Tblsp. melted butter
1 tsp. vanilla extract
2 cups powdered sugar
 
**  Combine all ingredients until smooth.
**  I used a piping bag or Ziploc bag with a very small hole cut in the corner to apply my glaze. 
 
Yield:  This made about 3 1/2 dozen cookies for me.

  5. Pumpkin is one of my most favorite flavors! Around Thanksgiving, I make pumpkin chocolate chip cookies & pumpkin cream cheese rolls! Yeah, I'm SO excited to have a new pumpkin recipe! Thank you for sharing!!
