Pumpkin Cupcakes with Cream Cheese Icing

 
If you are wanting a perfect pumpkin snack then you need to try these cupcakes.  They are super simple to make and taste GREAT! 
 
Cupcakes
1 yellow cake mix
1 cup pumpkin
1/3 cup oil
1/2 cup milk
3 large eggs
1 tsp. cinnamon
1/2 tsp. nutmeg
 
Bake at 350 degrees for 15-18 minutes or until toothpick inserted comes out clean. 
 
Icing
8 oz. cream cheese
4 Tblsp. butter
4 cups confectioners sugar
 
**Optional - You can add 1 tsp. cinnamon to the mix to make a cinnamon cream cheese icing if you like.
 
I decorated these with yellow sugar sprinkles, candy corn and pumpkins.
 
Note:  You could also make this recipe as a cake instead of cupcakes!

    1. Misty, you are right! Pumpkin is a great fall treat. I have to admit though I do not personally like "pumpkin pie" I make it because my husband and kids enjoy it. I will be posting several more recipes that include pumpkin each Friday leading up to Thanksgiving so check back.
